One of the great perks of summer is that fresh fruit is so plentiful. With visions of sun-ripened eats on the mind, I have put together this Tangy Two-Fruit Summer Salad. This recipe is an adaptation of the Tangy Watermelon Salad recipe found in the Plymouth Park United Methodist Church Family Table Cookbook.
As always, I stick to recipes without big ingredient lists and complicated instructions. Saves time and money.
2 Cups cubed nearly seedless Watermelon
2 Cups cubed Cantaloupe with seeds removed
3 Tablespoons Lime Juice (approx. 4 small limes)
1 Tablespoon Red Wine Vinegar
2 Tablespoons Olive Oil
3/4 Cup Crumbled Feta Cheese
2 Pinches of Salt (or to taste)
Cube Cantaloupe and Watermelon and place in medium to large mixing bowl.
In separate bowl, whisk together Lime Juice, Red Wine Vinegar, and Olive Oil. Pour mixed liquid over the fruit and use a couple of forks to toss fruit around in sauce until covered. Add salt. Then, stir in crumbled feta gently using fork(s) again. Serves 4 persons.

This looks like a great summer recipe!
Refreshing and means no having to get anywhere near the oven.
Wow I can only imagine what this would taste like with the fruit and the red wine vinegar with the feta! I have never had those two with fruit. I pinned to try for later. Thanks so much for sharing with us at Countdown in Style!
A bowl full of deliciousness is how I described the taste.

I love watermelon and cantaloupe fruit salad but I’ve never had a savory version. I’m very interested in trying this out this summer!
It is definitely good stuff.

Ooh this sounds like something different to try this summer. Thanks for sharing with Let’s Get Real (I’m co-hosting this week)!
Give a great tasty tang.
This is an interesting combo. I’ve never tried feta with cantaloupe or watermelon. But I do love cottage cheese with cantaloupe. Can’t wait to try it.
Amazing how savory goes so well with watermelon and cantaloupe.
The dressing sounds great with lime and red wine vinegar. This would be a nice addition to a cookout. Thank you for sharing!
Good this time of year because of all the fresh fruit available.
