One of the great perks of summer is that fresh fruit is so plentiful. With visions of sun-ripened eats on the mind, I have put together this Tangy Two-Fruit Summer Salad. This recipe is an adaptation of the Tangy Watermelon Salad recipe found in the Plymouth Park United Methodist Church Family Table Cookbook.
As always, I stick to recipes without big ingredient lists and complicated instructions. Saves time and money.
Ingredients
2 Cups cubed nearly seedless Watermelon
2 Cups cubed Cantaloupe with seeds removed
3 Tablespoons Lime Juice (approx. 4 small limes)
1 Tablespoon Red Wine Vinegar
2 Tablespoons Olive Oil
3/4 Cup Crumbled Feta Cheese
2 Pinches of Salt (or to taste)
Prep. Instructions
Cube Cantaloupe and Watermelon and place in medium to large mixing bowl.
In separate bowl, whisk together Lime Juice, Red Wine Vinegar, and Olive Oil. Pour mixed liquid over the fruit and use a couple of forks to toss fruit around in sauce until covered. Add salt. Then, stir in crumbled feta gently using fork(s) again. Serves 4 persons.

This is an interesting combo. I’ve never tried feta with cantaloupe or watermelon. But I do love cottage cheese with cantaloupe. Can’t wait to try it.
