Easter is one of my favorite holidays. I love the cheerfulness and pageantry that are part of this celebration of Christ’s resurrection. The new beginnings, the amazing colors of spring, and the festive atmosphere are great. In that line of thinking, I have adapted a muffin recipe by Lin S. from The Heartstone Inn cookbook to create Butterscotch Bunny Muffins. The ingredients are simple and the preparation is easy. Here goes!
Ingredients
2 cups flour, 1/2 cup sugar, 3 teaspoons baking powder, 1/2 teaspoon salt, 3/4 cup butterscotch baking morsels, 1 egg (well beaten), 3/4 cup milk, 1/2 cup vegetable oil, 1 16 ounce can vanilla frosting, mini peep cupcake toppers or other decorations as desired
Preheat your oven to 400 degrees. In a bowl, combine the dry ingredients of flour, sugar, baking powder, salt, and butterscotch chips.
Stir in one well beaten egg, the milk, and vegetable oil just until dry ingredients are moistened. The batter will still be lumpy.
Line your muffin tins with Easter-themed or other festive muffin tin liners. (I like to give the muffin tin pan a light mist of non-stick spray before inserting the muffin tin liners.) Helps the muffins come right out of the pan when done.
Use a spoon or ice cream scooper (put a little flour on either if batter sticking) to fill the liners about 2/3 rds the way full with batter. Bake about 18 to 22 minutes at 400 degrees until golden brown. Watch carefully towards end to make sure that the tops do not burn.
Allow the muffins to cool for at least an hour or two, then frost and decorate until your heart is content.
